Lebanese Food Parsley Salad Or Tabbouleh

I agree that I wasn't very active on this blog, but I have some good news that we'll be moving very soon to a better website and certainly more receipes and forum to discuss arabic food in general. Today I wanted to introduce a very known lebanese food called "Tabbouleh". The most famous lebanese salad, made of parsley, tomato, mint and burghul. The receipe serves 5 persons and took about 40 minutes for preparation.

Ingredients

1/4 cup burghul, fine cracked wheat
2 cups finely chopped parsley

1/2 kg (16 oz) firm red tomatoes, washed and finely chopped

1/2 cup finely chopped fresh mint leaves

1/4 cup finely chopped onion

1/2 cup lemon juice

1 teaspoon salt (as desired)

1/2 cup extra virgin olive oil

a dash of all spice (as desired)

Steps

Wash chopped mint and parsley then drain well.

Wash the burghul several times and drain. Soak it in chopped tomatoes for 20 minutes.

Rub chopped onion with salt. Mix all ingredients in a bowl. Add olive oil and lemon juice, toss the mixture well.

Serve Tabbouleh with crisp cos lettuce leaves, or fresh cabbage leaves.

I had to put the bulghur in hot water for about 30 mins as otherwise it would have been to hard to eat. Otherwise brill recepie!

I substituted quinoa for bulghur and lime for lemon (didn't have any) and it worked well.

Wow very nice vegetable carving on the plate. I went to arab countries before and I tried this one.
